A few weeks ago, I found a recipe for blueberry frosting online and couldn’t wait to make my own! Sometimes when I’m asleep, I dream about baking cakes… probably because it makes me so happy! I try to bake them as often as I can, and I always like to switch it up by trying new flavors and decorations. My family loved this blueberry frosting, and I hope you will too! Okay, Let’s get started!
WHAT YOU WILL NEED:
FROSTING:
- 8 tablespoons of softened, unsalted butter
- 1 ½ cups powdered sugar
- 8 ounces cream cheese (diced and softened at room temperature)
- 2 teaspoons vanilla extract
- 2 tablespoons of blueberry jam (strained)
INSTRUCTIONS:
1. Beat the butter and sugar on medium-high speed until light and fluffy (approximately 3 minutes).
2. Dice the cream cheese after it has reached room temperature. Scrape the sides of the bowl and then add the cream cheese a couple pieces at a time with the mixer on medium.
3. Mix until smooth and then add the vanilla.
4. Strain the blueberry jam and then add it to the mixture until smooth.
5. I love the natural color that the jam makes when it is mixed with the other ingredients, but if you would prefer a darker purple, you can always add some food coloring.
6. When I assemble the cake, I usually put some not strained blueberry jam in between the different layers of cake just to add a little something extra.

I usually pair this frosting with either a lemon cake or a plain white cake because the jam will add plenty of flavor.
