I woke up this morning wanting to make something beautiful and delicious. Whimsical, floral cakes always inspire me, so the idea of some feminine fairy tea cakes seemed like the perfect thing! I try to take every opportunity I can to incorporate flowers into my life… and chocolate!
WHAT YOU WILL NEED:
CAKE:
- 1 box cake mix
- 1 16 oz. tub sour cream
- 4 eggs
- 1 package instant pudding
- ¼ cup melted butter
FROSTING:
- 1 8 oz. cream cheese
- 1 8 oz. butter
- Powdered sugar
- A little dash of vanilla
INSTRUCTIONS:
1. Begin by combining the dry ingredients (cake mix and instant pudding) into a mixing bowl. I don’t do this in any particular order, so this cake is super simple to make!
2. Melt the ¼ cup of butter and give it a good stir before adding it into the mixer. Then add the eggs and sour cream.
3. Mix everything together until the cake batter is smooth.
4. For these tiny cakes, I chose five 5” miniature pie pans. Avoid filling them up to the brim because they will expand a lot before reaching their final bake.
5. I put them in the oven at 350 degrees for 20 minutes, but continue to check them and add time as needed. I always make sure that my cakes can pass the toothpick test before taking them out of the oven.
6. After they are finished baking, I take the cakes and set them on the counter for 10 minutes as they begin to cool. Immediately after that 10 minutes ends, I flip them upside down for another 10 minutes in order for them to slide out of the cake pan.
7. After the cakes have cooled and successfully fallen out of their tins, I begin cutting them to the size I prefer. I usually grab a jar out of the pantry, cover it with a Ziploc bag, and trace the shape I want to cut out of the tiny cake.
8. After the cakes have been cut, I stick them in the freezer so that they can harden a bit before I frost them. While they are in the freezer, I start the frosting!
9. I mix all of the ingredients together in no particular order. While mixing the frosting, I continue adding powdered sugar until the frosting is sweet enough. This will depend on your own taste, and you can add as much or as little sugar as you want to your frosting. I have a major sweet tooth, so I like mine pretty sweet. This usually causes me to add a pretty heavy amount of powdered sugar to my frosting.
10. I like to stack two different circles on one another with a little bit of icing in the middle. Then I frost the two together as if they are one single cake.
11. Finally, I decided that a little bit of chocolate design would add something special, so I melted some almond bark melting chocolate and put it into a little Ziploc bag.
Now, my favorite part! The flowers! When adding flowers to my fairy tea cakes, I always try to get some variety in the size of the blooms I choose. It adds depth, and also gives you the opportunity to make each individual cake somewhat different from the others.
You can shop the scarf in my hair here. This Lauren Conrad denim top is totally sold out, but you can shop one from Poshmark here! I swear I would wear this denim shirt every day of my life! You can also shop this pretty white cami here!
Also, a few girls have direct messaged me on instagram to ask me what fake eyelashes I wear! I actually don’t wear any, but I have purchased the same Lash Sensational mascara by Maybelline for probably 4 years now, and it is still my absolute favorite to this day! I get mine in the color “very black” because the color “blackest black” kind of brings out too much purple under my eyes when I stay up too late at night (so pretty much every night).
Okay, if you decide to try this recipe at home, don’t hesitate to send in a picture of your final product! I would love to see what flowers you choose, and the designs you make with your melted chocolate!
xx, Haley
